These are all the simple healthy meals & snacks I have been loving lately, straight from my instagram stories.
Hi, everyone! Lately, I’ve been on a health kick and trying to eat healthier and workout more often. I’ve been trying out different healthy recipes and snacks and have been sharing my favorites on my instagram stories. These are honestly so delicious you have to try them!
Breakfast
This is seriously my favorite breakfast. I usually eat this oatmeal with blueberries, almonds and cinnamon. It’s sweet because of the blueberries and cinnamon and crunchy from the almonds. I’ve never been a fan of oatmeal before because of the texture but adding almonds makes it crunchy and less mushy!
FUN FACT: Blueberries and cinnamon are very high in antioxidants. This means better brain function, protection against free radicals and reduces your risk of chronic diseases!
Lunch
Those potato tacos look so good right now! All these meals are so delicious, easy & quick to make! Honestly, 30 minutes tops.
P O W E R B O W L: This has extra firm tofu, corn, brown rice, romaine lettuce, and spinach. To season the tofu I use garlic powder, paprika, and chili powder (I like it spicy!). I add sesame seed oil to a pan on medium heat and cook the tofu until it starts to brown. I add whatever veggies I have at the moment and make a “bowl” out of it. For the dressing, you can add olive oil.
S P I C Y P O T A T O T A C O S: I start off with boiling diced potatoes (with the peel on) just until I can pierce a fork through them. Then I warm up the oil in a pan on medium heat and add the potatoes. I season the potatoes with paprika, salt, black pepper, and chili powder. I heat them up until they get crispy. Then finally, put them in corn tortillas with avocado! I would definitely top it off with tomatoes and salsa (I just didn’t have any that day).
L E M O N P E P P E R C H I C K E N: This is so quick to just throw in the air fryer! I own this one and it’s honestly become my best friend! I use it to make chicken, french fries, fish, and roast veggies! I didn’t know I needed an air fryer until I started using it for everything and I love how it cuts down the time of cooking. To start, I season the chicken with salt and lemon pepper seasoning. Then I put it in the air fryer for 20 minutes (flip halfway) at 350. It comes out so good and juicy! For the zucchini, I pan fry them with a little bit of oil, salt, and pepper (sometimes add garlic powder). This was the first time I had avocado on the side and it tastes so good with the chicken!
Dinner
I love me a taco night! Probably my favorite meal ever, TBH.
T A C O B O W L: First, cook the turkey ground meat then add taco seasoning. I then heat up a microwavable bag of basmati rice (any rice would be fine). Chop up some tomatoes and onions. Then throw it all into a bowl. Done! Super easy and quick for a week day.
Snacks
I love me some snacks, but I’m trying to find “healthier” ones that aren’t chips (because I only used to snack on chips). Usually after breakfast I’ll make myself a green smoothie with spinach, green apple, mango, banana, orange and water. Taste so fresh and you can’t even taste the spinach! OMG, this dairy-free ice cream is honestly MY ALL TIME FAVORITE. It tastes EXACTLY like regular chocolate ice cream, except it’s made with cashewmilk! Perfect for vegans, people who are lactose intolerant (like me) and those sensitive to gluten! Seriously, it’s so delicious you have to try it. I’ve tried a lot of dairy-free ice creams before, but this one is the best. Not the “healthiest” but it’s definitely worth it.
